Oysters Rockefeller

8 oysters in shells
1/3 tablespoon chopped onion
2/3 tablespoon snipped fresh parsley
1/3 tablespoon melted butter
salt, black pepper, and paprika
1/3 cup finely chopped cooked spinach
1/12 cup fine dry bread crumbs
1/6 cup cold butter, cut into teaspoon-sized bits

Preheat the grill to hot
Wash the oysters.  Open the oyster shells with a shucking knife.

In a bowl, mix the onion, parsley, and butter. Spread over each oyster. Sprinkle with salt, pepper, and paprika as desired.

Top each oyster with two teaspoons of spinach and then sprinkle evenly with 1/2 teaspoon of the bread crumbs. Dot each with a teaspoon of butter.

Using tongs place the oysters on the grill rack until bubbly and heated through (the edges of the oysters should start to curl), about 5 minutes.

Serve immmediately.
