Grilled Pizza with Corn Salad
Olive Oil
1 small onion- finely diced
Salt and Pepper
12oz. corn
1 link Chorizo or your favorite sausage from the Big Y Meat Counter, removed from casing
½ lime
Big Y Pizza Dough
1 Jalapeño, sliced into rings, seeds removed or left, depending on your taste
1 Cup Cotija Cheese- grated or crumbled
In a sauté pan heat Olive Oil over medium heat
Add onion, salt and pepper, sauté until translucent
Add Corn and Chorizo sauté until sausage is cooked through
Squeeze juice from lime over pan and remove from heat.
Roll out pizza dough and dress with a few swirls of Olive Oil
Spread corn and chorizo mixture on pizza crust.
Place Jalapeño rings on pizza
Cover pizza with Cotija
Bake 9-12 minutes until done
