Old Bay seasoning

Get your grill or smoker going to 225*
Wash and rinse the oysters
Using an oyster knife, carefully shuck the oysters being careful not to spill too much of the liquid
Sprinkle a little Old Bay Seasoning onto each oyster (optional)
Place the oysters on the grill or smoker, using the grates to balance them.
Leave them on for about 30-40 minutes
With about 20 minutes to go, place the lemon wedges on the smoker (optional)
Carefully remove the oysters, spritz with lemon and serve hot
