The full-body and ripe flavors of Chardonnay, with its ability to create wines of high alcohol, make it the most popular grape of all and over the past 40 years it has grown into the most widely planted white grape in many regions of the world. The thing about Chardonnay that’s truly amazing is that it’s a blank slate. The winemaker can choose to produce wines that mirror many different styles. Just by harvesting early and making a high-acid version you can achieve Chablis style, riper grapes and use of oak makes a Southern Burgundy style or the intense oak of a California style.
