Mint Julep Balls

Perfect for your Kentucky Derby Party. Light and Sweet.

INGREDIENTS:
2 cups crumbled vanilla wafers
1 cup confectioners’s sugar – plus additional for dusting
2 tablespoons unsweetened cocoa powder
1 cup finely chopped walnuts or pecans (we used pecans)
1/4 cup Bourbon – (we used Maker’s Mark)
1-1/2 tablespoons honey – the recipe called for corn syrup
1/2 teaspoon peppermint extract

INSTRUCTIONS:
In a large bowl, combine the wafer crumbs (use a food processor to crumble them fine), 1 cup confectioners sugar, the cocoa and nuts until well mixed. Add the Bourbon, honey and peppermint extract. Mix well with a spatula and then use your hands until the mixture holds together.

Form the mixture into one inch balls and place on parchment lined cookie sheet. Dust with additional confectioners sugar. Serve and Enjoy!

You can store in an airtight container until ready to serve, but if you are like us – they wont last that long!
