Grilled Potato Salad
8 to 10 Red Potatoes
2 Tbsp Fresh Dill (chopped)
4 Hard Boiled Eggs (quartered)
4 pieces of Cooked Bacon (crumbled)
1 to 2 Cups of Mayonnaise
Salt and Pepper to taste.
Par boil the whole potatoes for 5 minutes. Let cool then slice into quarter inch pieces. Grill the potatoes over medium heat for 5 to 10 minutes, until golden and nicely grilled. Cook the 4 pieces of bacon and crumble. Hard boil the eggs and quarter. Let the bacon and eggs cool. Chop the fresh dill. In a large serving bowl, combine the potatoes, bacon, eggs and dill. Add mayonnaise to taste and salt and pepper to taste. For additional flavor, consider adding sliced green olives, diced cheddar cheese or chopped onions or scallions.
